Serves Makes about 5 Pancakes


1. Preheat the oven to 180oC 2. Whisk together all the dry ingredients 3. Add the mashed banana and almond milk, then stir to combine 4. Let the mixture sit for about 5 minutes to thicken up 5. Blob big spoonfuls of the mixture onto a lined baking tray, you should be able to make about 5 pancakes depending on what size you like 6. Bake for about 10 minutes or until golden and fluffy 7. Serve with toppings of your choice – I loved freshly chopped fruit with a sprinkle of LSA * I use a brown rice protein powder, which I find gives the pancakes a good consistency. Using a different type of protein powder (like whey, pea or hemp) might yield a different result!
